Cooking note: Reducing all-purpose flour by ~25% is feasible because cottage cheese gnocchi dough is more forgiving than egg-only pasta doughs — the protein and moisture in the cheese provide enough binding. Cutting the pesto from ½ cup to ¼ cup reduces fat dramatically (pesto is ~20g fat per 2 tbsp) without breaking any chemical bonds. Halving the olive oil for pan-crisping is offset by using a well-seasoned nonstick pan to still achieve browning via the Maillard reaction. No dry-to-wet ratio imbalances are introduced.
